Im no expert here, but I feel like when designing these, they likely had an english word(or perhaps some other native language of the original designer) in place of the alien text as they determine what looks good and what doesnt. Then they replace the words with the alien text.
Could still just be gibberish they used, but I feel its very possible it does say something atleast to someone internally.
For the other alien text, it indeed looks like they made their own font and typed English filler text like caution and what have you. It’s not an ARG, so, that method is good enough, they don’t need to hire a linguist to craft Klingon 2.0. 
In the new ones, I don’t recognise any pattern off the top of my head, looks like “art made to look like alien text” to me, agreed.
